In Cocconato, the large banks of clays and yellow sands of much of the province of Asti give way to banks of gypsum and calcareous soil with soft, white marl – called THOU BIANC (tufa) in Piedmontese – that disintegrate in the sun, making the earth clear. These soils are traditionally reserved for red grape vineyards because they yield wines of great strength and elegance. It was therefore surprising to discover that here the white wines become savoury, intense, very fragrant and long-lived. In the east-facing lands of the Pieve vineyard, we grow a Chardonnay that is the result of Italian varietal research together with some early biotypes from Burgundy.
