Vermouth from Piedmont, an aromatized wine with 16% ABV, produced by Giulio Cocchi since 1891 in Cocconato (AT). A thrilling vermouth, rich in sensations, with artemisia and citrus taking center stage, balanced by cinchona. Giulio Cocchi’s original recipe calls for herbs such as cinchona and rhubarb, which give the beautiful clear wine a light brown hue. To accentuate the amber hue, browned sugar, prepared over the fire like crème caramel, is added. Along with its color, it also lends a special touch to the flavor: a crunchy, candy floss touch that smooths out any bitterness without the need for vanilla. The flavor is rich, with vibrant notes of cocoa and bitter orange. The infusion of several noble and balsamic woods yields light camphorated notes and notes of rosemary. Minor ingredients include herbs and woods with unique aromas such as sandalwood, musk, myrrh, and nutmeg.
