The grapes are planted in prestigious „crus,“ historic vineyards that predate the birth of the wine itself, having been present since more remote times, when the Marquises Falletti di Barolo were winemakers in the 19th century. Current production is attributed to the company founded by Pietro Emilio Abbona, who more recently purchased the Tenuta Opera Pia Barolo estate after the last branch of the family died out. The vines are located on the slopes of the hills and enjoy constant sunshine; they are trained using the Guyot system. The medium-textured soil is pervaded by quartz sand and extremely fine silt, which translates into an abundant quantity of trace elements in the wine. The wine is produced from grapes that, as soon as they are harvested, are brought to the cellar and immediately pressed. This rapidity of processing preserves the fragrance intact and gives the must, immediately chilled, an unmistakable aromaticity and intense aroma. Fermentation takes place in an autoclave, so the production of carbon dioxide in the closed environment, a completely natural process, gives the drink a lively foam. This process is stopped when 140 grams of sugar per liter is reached. Aromas of orange blossom, apricot, and peach are perceived; with a low alcohol content and moderate acidity, this DOCG sparkling wine leaves a pleasant and lingering sensation of freshness., so the production of carbon dioxide in the closed environment, a completely natural process, gives the drink a lively foam.
